The mountain ranges of Yunnan’s southwest, bordering Myanmar, are known for producing excellent coffee and tea. These lands have also been home to the Wa people for generations, who make their living cultivating both crops.
Among their traditions, Shui Jiu (水酒) stands out. It is a representative drink brewed in almost every household, made from rice into a sweet wine.
Unlike conventional winemaking, its process does not involve such a complex saccharification stage, which gives Shui Jiu its uniquely distinctive sweetness.
This coffee is crafted with inspiration from that very unique method, resulting in a cup with strong juiciness, bright acidity, and a subtle aroma of sake or corn spirits.
