After float-sorted and colour-sorted, coffee cherries were sealed in tanks and anaerobically fermented for 48 hours. Then the cherries were de-pulped and fermented under water again with yeast naturally extracted from strawberries.
Sky Estate owns 1200 acres of coffee plantation in Baoshan, Yunnan, with outstanding micro-climate conditions that is suitable for coffee.
About the processing method
Zeng, the Head Producer aims to explore wider possibilities among the flavour wheels of Yunnan Coffee by embracing scientific knowledge, advanced technologies and mindsets.
Four Kilo Fish has been working with Zeng for three years and we admire his pursuits of higher quality and better coffee. 
Working with Bio-tech companies from Taiwan and using their technologies and facilities allow Zeng to extract natural yeast from fresh strawberries
During the second fermentation of this lot, Zeng introduced the yeast to promote fermentation and generate new flavours from the coffee. 
Most of the coffee-growing regions in Yunnan have abundant water supply from the nature, plus the factors of the climate condition, coffee cherries take longer time to dry under the natural processing method, therefore, washed process is the most common processing method in Yunnan. 

This is not only just a clean and sweet washed coffee that represents the typical processing method of the origin, but also a pleasant coffee with flavours that brought to you by the power of nature, science and technology.
