Mei and her family produce tons of green tea, black tea and Pu'er tea every year apart from coffee. It is not surprised when it comes to coffee fermentation, they think about tea.
Wet-Piling (“渥堆”)is a widely-used technique in Pu'er tea and black tea processing, it surges bacteria development in tea leaves and brings out more sweetness and round mouthfeel.
Mei applies the Wet-Piling technique to process this lot of coffee. Ripe coffee cherries were piled up under controlled humidity and temperature. Coffee cherries inside of each piles were fermented under a relatively anaerobic environment, while the cherries on surface were fermented aerobically. This intentional uneven fermentation also brings out more layers of flavour to the cup.
