Now in our fifth year of collaboration with Four Kilo Fish and Zuo Yuan, we've shared many exceptional coffees brought to us by the Owner/Head Producer Fan Qizuo. This time, however, we are excited to introduce another remarkable producer—a young woman named Zu Xiu.
Zu Xiu, the niece of Fan Qizuo, has been immersed in coffee farming from a young age, growing up amidst the coffee plants, running between the processing stations. Despite her youth, Zu Xiu has taken on a significant role in managing the estate's processing operations.
Her diligence, eagerness to learn, and hardworking make her a standout in this remote mountain producing station. We were impressed by how effortlessly Zu Xiu managed thousands of kilograms of coffee cherries, knowing exactly which batches needed flipping, which were nearly dry, and which required further fermentation.
The coffee processed by Zu Xiu continues the legacy of Fan Qizuo’s expertise in washed coffee processing. It beautifully captures the highlights of Zuo Yuan and the Baoshan region, characterised by its clarity, sweetness, and a delightful citrusy acidity.
